Who doesn't love a good pancake? I mean really, who doesn't? Really?

Well I love pancakes, I love pancakes on mornings when I don't have anything to do , or I have tons to do, I love pancakes for dinner (see where I'm going here, lol)
Either way I also like things that enlist ingredients that I may have left over (like egg whites, from mousse or ice cream making) so my kiddos were requesting pancakes and with leftover egg whites in my fridge and a quest to "fancy" up my pancakes I came up with this recipe and I'm ready to share :)

2 cups all purpose flour
2 1/2 teaspoons baking powder
3/4 teaspoon sea salt
3 tablespoons raw cane sugar
4 egg whites (room temperature)
3 tablespoons palm oil, softened (you can sub melted butter or sunflower oil)
1 to 1 1/2 cups milk
1/4 teaspon vanilla powder (or a teaspoon of extract)
1/2 teaspoon cinnamon
1 medium size orange zested 

In a medium size mixing bowl put in your palm oil and sugar and mix well with a wooden spoon
Add half of the flour , slat, baking powder and mix well
Stir in 1 1/4 c milk just until mixed then the remaining flour.
in a small bowl wisk egg whites and remaining milk just until slightly frothy
Add the egg whites to your batter and stir just until mixed. If batter is too thick add a bit more milk
Stir in the orange zest.

 I use a griddle pre-heated to 400 degrees to cook these and I think you guys can swing it from here but here are a few tips.

Your batter should be a little lumpy,
 about the consistency of yogurt


When you flip then they'll puff up a bit in the middle, let them puff up then just press down the middle a bit with your spatula


Top with whatever you like but they're delicious with fresh strawberry (or blueberry)syrup and whipped cream and now you can stay at home and enjoy yourself and give the guys at IHOP* a break :-)
